Stella's 'Peanut Butter' Cups
Another favourite treat Stella-fied: delish, guilt-free and rawsome!
May your Stella ‘Peanut Butter’ Cup runneth over with Divine Love
Ingredients
‘Peanut Butter’ Bottoms
3/4 cup 100% natural peanut butter or almond paste (or you can do half of each if you like the flavour combination!)
1 1/2 tbsp Jarrah honey or 1 tbsp organic Agave nectar
2 tbsp organic cold pressed coconut oil (liquefied, like we did with StellaNutella)
1 pinch of Himalayan salt
Raw Chocy Tops
1 cup organic raw cacao powder
2 tbsp Jarrah honey or 3 tbsp of organic Agave nectar
1/2 cup organic cold pressed coconut oil (liquefied, like we did with StellaNutella)
(raw organic chocolate nibs to sprinkle on top if desired)
Note* If you prefer equal parts ‘peanut butter’ to chocy then halve the Raw Chocy Top ingredients. Stella likes a little extra choc magic with her cups!
Method
Whip out some paper cupcake patties
Combine the nut butter or almond paste, coconut oil and Jarrah honey / Agave nectar in a bowl and stir until the ingredients are well mixed
Place a spoonful of the mixture into each cupcake pattie cup until you have used the entire mix
Pop these in the freezer until they harden
Now for the Raw Chocy Tops!
Combine the cacao powder, coconut oil, Jarrah honey / Agave nectar in a bowl and stir until well mixed
Place a generous spoonful of the Raw Chocy mixture over the hardened Peanut Butter Bottoms and spread it around evenly
Cover each of the cups until the Chocy mix is used up
Sprinkle the raw chocolate nibs on top if you would like an extra crunch and some texture to your yummy creations
Pop them back into the freezer to harden
Now comes the fabulous part – make a cup of tea or a juice while you wait until they set so you can delicately devour these Stella babies!
